Vegan Maple Molasses Apple Pie

Apple pie = Fall (or Christmas). It’s time to start baking!! I got a bunch of beautiful apples and my birthday is Monday, so instead of a cake, I’m baking myself a pie

Pie Crust

2 C all purpose flour
1/2 stick Earth Bound, cold
1/2 t salt
3 T cold water, maybe one more tablespoon
3 T maple syrup

Add flour and salt to a bowl and cut in butter. You can use a fork but I just use my fingers. You want pea like pieces. The dough should be crumbly. Add in syrup and 1 tablespoon of water at a time until dough forms. Split dough into 2 pieces and wrap in plastic wrap and chill for about an hour.

When ready to use, roll out each piece. Place one in a pie dish. The other you can cut into shapes to place on top or just use the whole piece to cover. Poke little holes throughout to release steam.

Apple Filling

3 Large apples (I used Honey Crisp)
Lemon juice from one lemon (or 1 T apple cider vinegar)
1 C Maple syrup
1/4 C molasses
3 t pumpkin pie seasoning (yes, PUMPKIN PIE spice)
1 t all spice (opt. because I forget to add it sometimes)
1 T melted butter
1/4 C all purpose flour

Peel apples and cut into slices. Toss with lemon juice. Add in flour and mix together. Heat the rest of the ingredients, except the butter, in a saucepan over low heat until it bubbles slightly. Add apples to sauce pan and stir together. Let mixture sit for at least 30 minutes. Add to pie crust. Place the top piece of dough on pie however you’d like. Brush on melted butter.

Pre heat oven to 375′. Bake for 45 minutes or until apples are soft.
