Vegan Gingerbread Cookies

Vegan Gingerbread Cookies

A dairy free, cruelty free, delicious holiday cookie?! Yes please!

Yes, they’re sugary sweet, but what cookie isn’t for the holidays when it’s done right? Even vegans need a little junk food once in a while. And these cookies are sure to satisfy vegans and non vegans! So, gather your ingredients, turn on some Christmas tunes, start the coffee and let’s get baking!

Ingredients

1/2 C Solid coconut oil

1/2 C Vegan honey (Bee Free is great!)

1/2 C granulated sugar

1 t Vanilla

1 T Apple cider vinegar

2 1/4 C All purpose flour

1 1/2 t Baking soda

1 1/4 t cinnamon

1 1/4 t Ginger

1/4 t salt

1 T Flax meal + 3 T water

Directions

Create the flax egg first by mixing water and flax meal together. Let sit for about 5 minutes so it starts to gel.

Add butter, sugar, acv, vanilla and flax egg to a bowl and cream until combined.

Add in the dry ingredients and mix until a thick dough has formed.

Place a cloth or dish towel over the bowl and freeze for about 30 minutes.

Preheat over to 350.

Place half of the dough on a very lightly floured surface and roll out until you have a very thin sheet.

The fatter the sheet, the thicker and chewier your cookies will be. I prefer the crispy thin cookies.

Cut out shapes and place on a baking sheet.

Bake for 10 to 15 minutes or until you can kind of see a golden brown on top! Check them at 10 minutes to make sure they’re not burning.

The thickness determines the amount of time, so check the bottoms so they’re not burning. (I had a couple mistakes 🤷🏻‍♀️)

Repeat until all the dough is used up.

**I changed the maple syrup to vegan honey. I originally used vegan honey and when typing this post, I wrote maple syrup. Maybe because I use syrup in everything?! So sorry!

*** Also, you can substitute the honey for 1/2 cup of vegan butter, like Earth Bound!

Ingredients for Frosting

1 C Powdered sugar

2 t coconut oil

Drizzle of water

Directions

Add all ingredients into a bowl and mix thoroughly. Place into a piping bag or a ziplock with the corner cut.

When they’re cool, frost away!!
