Quick Black Bean Soup

Simple Sunday night dinner!

Black Bean Soup

2 cups cooked black beans
1/2 jalapeño
1 small red onion
3 cloves garlic
3 cups veggie stock
1 cup water
1 tbs grainy mustard
1 tbs tomato paste
2 tbs flour
1/4 c non dairy milk
Salt and pepper
2 tsp onion powder

Sauté onion, garlic and jalapeño. Add beans and spices along with veggie stock and water. Boil, then simmer for 1 hour. Use hand blender or large blender and purée until smooth, adding in milk and flour to thicken.

Serve up with some avocado and nutritional yeast.
