Perfect Pancakes

In honor of National Pancake Day, I made pancakes. Cause that’s what you do when it’s a holiday devoted to one of the world’s greatest breakfast foods!

These are super airy and fluffy and there’s NO ADDED SUGAR! 😯

That’s right. You read that correctly. I just save the sweets for the top…

Ingredients

1 C bread flour
1 C all purpose flour
2 T baking powder
1 t salt
2 C non dairy milk
2 T apple cider vinegar

Directions

Mix milk and vinegar together and set aside to curdle.

Mix the rest of the ingredients in a bowl. Add milk mixture and stir until there’s no more dry flour.

Evenly heat a skillet on medium heat with a little coconut oil.

Pour about 1/4 cup mixture into skillet and cook until it starts to bubble slightly. Around 2 to 3 minutes.

Flip and cook for about another minute.

Serve it up right with butter, syrup, whip cream, berries… whatever you have on hand!
