Mountain Life Update

Four months in already! We’ve been living in the mountains since April and so much has happened. As I sit here and type, our pine ceiling is literally going in. I’m lucky enough to have the porch of my dreams, so I’m sitting in the shade, enjoying the summer breeze, blogging, drinking coffee and listening to the sounds of construction.

I feel terrible that it’s been so long since I’ve posted, but between a freelance gig I got, not being in our own space, living out of a garage and a car… I just let myself get behind with my posts. But things are starting to feel right, and I’ve got tons of recipes to share with you!

We’ve actually been living in our home for a few weeks now! We have no water or gas, but we have electric and we have a fridge! It’s sort of like glamping. Every morning we have to deflate the air mattress so work can be done, but it’s been so much fun. The house will be ready before we know it! So many things have been delivered too! We got our claw foot tub last week (dream tub!), our farm sink is on its way, the floors are on their way…

 

 

I’m super excited about decorating, and organizing and cooking in my new kitchen! Speaking of cooking, I’ve been totally loving cooking over a fire. We have a great little spot near our pond that Phil built a fire pit near, so we pretty much make dinner outside every night then sleep inside where it’s warm and bug free. Like I said, glamping! :)

 

 

Also, can we talk about how much vegan food I’ve found up here?! I have 3 co op’s/natural stores, each less than an hour away from me and there are even vegan friendly restaurants. I have farm stands at every corner. There’s even a woman who bakes pies with produce from her very own gardens and orchards, and guess what! They’re vegan!

There’s a place in Saranac Lake called Nori’s Village Market that I’m totally in love with. It’s about 45 minutes from where we live, so when we go, we make a day of it. Lake Placid is another 10 to 15 minutes from Saranac Lake, so we usually hit both towns. They always have vegan muffins, cookies, incredible vegan grab and go food with a place to sit and eat. Great coffee and tons and tons of vegan groceries. They even have Beyond Burgers!

Lake Placid has a wonderful place called Green Goddess Natural Market and let me tell you… their vegan breakfast sandwiches are killer!! Pretty much everything in their little café can be made vegan. They too, have a huge variety of vegan pastries and loads of groceries.

There are many more places to list, but that’s for another time!

So, I guess that’s it for now. More photos will be on their way. The place is a mess inside still, so it hasn’t been photo worthy, but more pics will be up soon!
