Collard Green Wraps

Meatless Monday! Nothing better than a good wrap and, an even better way to mix things up is to use all veggies and no wheat.

Collard Green Wraps
5 Medium carrots
1 T black sesame seeds
2 t ginger powder
1 T olive oil
1 Medium onion, thinly sliced
Pumpkin seeds
1 Large avocado, sliced
Soy sauce
Sweet chili sauce

Sesame Carrot Ribbons
Peel the first layer of the carrots off then use the peeler to make “ribbon” shapes. Peel until there’s nothing left and throw that last little piece in with the ribbons. Sauté the carrots in oil for about 10 minutes with sesame seeds. Add in ginger and mix well. Set aside.

Sauté the onions next, in the same pan. I don’t usually add oil to the onions.

Wash the collard green leaves and cut off the stem. Spread a layer or avocado, carrots, onions and a sprinkle of pumpkin seeds. Wrap like a burrito and serve with soy sauce and sweet chili sauce.
