Vegan Pumpkin BLT

A simple, healthier, fall version of a BLT. Instead of a vegan mayo, try pumpkin.

Pumpkin Spread
2 T canned pumpkin
1 t unsweetened almond milk
Pepper
1/4 t salt
1/4 t coriander

Mix together well. This is enough for one sandwich. Double everything to serve two.

I used Tofurky Maple Tempeh and gluten free bread. Load your sandwich with a leafy green of your choice, raw onion, tomato and smother with the pumpkin spread. Happy fall!!
