Vegan Corn Bread

Vegan Corn Bread

You know you want some! And it’s ok because it only has maple syrup and coconut oil. Soooo good! and yes, I did slather on some Earth Bound and I’m okay with that!

Corn Bread

1 C medium ground cornmeal
1 C fine ground cornmeal
1 C bread flour
2 t baking powder
1/2 t salt
1/3 C melted coconut oil
2 to 3 T maple syrup, depending on how sweet you like it
2 C coconut milk + 2 t apple cider vinegar

Mix coconut milk and apple cider vinegar together and set aside to curdle.

In another bowl mix all dry ingredients together. Add oil and maple syrup to milk mixture and stir together. Pour wet into dry and stir until everything is blended smoothly. Grease a pan with a little coconut oil and pour in batter. Set oven to 375′ and bake for 35 to 45 minutes or until toothpick comes out clean.
