Pancakes!

Pancakes!

 

I’m really more of a waffle person, if you haven’t noticed by my instagram page, but every once in a while pancakes call out to me!

I had some frozen blueberries in my freezer and since I have a sweet tooth, yet I don’t use sugar, I thought it’d be the perfect touch of sweet to help that craving of mine.

Ingredients

1 C non dairy milk + 1 T ACV
1 C water
Frozen or fresh blueberries
2 C whole wheat flour
3 t baking powder
1 t salt

Directions

Add apple cider vinegar to milk and let sit for a few minutes to congeal.
Mix dry ingredients together then add wet.
Heat skillet with a little coconut oil and pour on batter. You can either add the berries in the mixture or throw a few on top of each pancake before you flip it.

Serve with some non dairy butter and syrup!
