Measuring  Cup Waffles

 

Want something delicious for breakfast, but don’t wanna cook OR make a huge mess? Yeah, me too.

So I made waffles in a measuring cup. Blueberry banana waffles actually!

Side note, there’s NO refined sugar!

Spelt Blueberry Banana Waffles
Makes 2 full size waffles

Ingredients

1 C spelt flour
1 t baking powder
Dash of salt
1 small banana
Handful fresh or frozen blueberries
1 C water

Directions

In a measuring cup, or a bowl, add all dry ingredients. I happen to have a 2 cup, plus a little extra room, measuring cup.

Add banana and mash. Next add the rest of the ingredients. Mix well.

Pour half the batter onto preheated skillet or waffle maker. You might have to cook these longer because of all the liquid from the berries and the mashed banana.

They’ll be a little soft in the middle and crispy on the outside.

Serve up with some vegan butter and syrup!
