Gluten Free Thanksgiving Veggie Bowl

Alrighty folks! Last possible Thanksgiving dinner idea and it happens to be gluten free!

This was made with a bunch of left over veggies and it worked out beautifully. I also had some gluten free flour hiding in my pantry and used that for gravy.

There’s not much to explain about this one. It’s that simple.

The only thing I can really say, is that there really are no measurements or specifics. It’s all just cut and bake, or sauté, to your liking.

Veggie Bowl

Cherry tomatoes
Brussel sprouts
Carrots
Sweet potatoes
Kale
1 Medium onion
2 t capers
1 T Balsamic glaze, or vinegar
1 t paprika
Salt and pepper, to taste
Oil, for cooking

Pre heat oven to 450’

Slice potatoes into bite size pieces and place them in a baking dish. Pour over a little olive and sprinkle with salt, pepper and paprika.

Bake for 30 minutes or until tender.

In another baking dish, add diced carrots, brussel sprouts (I cut mine into fours) and cherry tomatoes.

Drizzle over olive and sprinkle with salt and pepper.

Bake for 30 minutes or until tender. The cherry tomatoes might pop, and that’s fine!

Heat about a tablespoon of olive oil in a large skillet.

Cut onion into large pieces and sauté until caramelized. Add in handfuls of bite size kale and cook down until you’ve cooked it all.

Once wilted, add in capers, salt and pepper and balsamic.

Balsamic glaze if you want something on the sweeter side or just regular balsamic vinegar if you want it a little tart.

Gluten Free Onion Gravy

2 C veggie broth or mushroom broth
1 Medium onion
1/4 C gluten free flour
1 T rosemary
1 t poultry seasoning
Salt and pepper, to taste
Oil, for cooking

Dice onion and sauté in a little olive oil until nice and caramelized.

Add in broth and spices and bring to a boil.

Turn heat to low and slowly whisk in flour.

You can add more broth or water to make it less thick. Or just add more flour to thicken it. Play around with it until you find something that works for you.

Pour the gravy generously over your veggie bowl, add a little side of cranberry sauce and have a happy gluten free Thanksgiving!
