Easy PEAsy Macaroni Salad

I mentioned that I’m completely surrounded by farm stands, right? There’s nothing like fresh produce!

 

 

I have tons and tons of peas so I thought I’d whip up a quick dinner that’ll get even better by tonight, like soup. Know how it’s always better the next day?

This wasn’t timed, but I’d say this probably took 15 minutes to make. That includes cooking the macaroni. Next time, I’ll time it, but know that this is a super fast meal to make! Great for dinner by itself or a perfect BBQ side dish!

Ingredients
1 package macaroni, or noodle of choice
1 Small red onion, diced
1 Cup peas, fresh or frozen
1 Can sliced black olives
2 Medium tomatoes, diced
1/4 Cup nutritional yeast
2 Tbl vegan mayo (I used Just)
Salt, to taste
2 tsp Black pepper
2 tsp Tarragon
2 tsp Thyme
1 tsp Onion powder
1 tsp Garlic powder

Directions
Boil the macaroni per instructions.

In the meantime, dice the onion and prep the peas, if using fresh.

Throw everything into a bowl.

When macaroni is done, drain and rinse with cold water. Add to bowl and mix thoroughly.

Let sit for a couple hours for maximum taste!
