Arugula & Avocado With Molasses & Almond Dressing

Molasses & Almond Dressing
2 T almond butter (smooth or somewhat chunky)
1/2 Warm water
1 t sesame oil
2 t salt
1 t pepper
1 t coriander
2 T Black strap Mollases
Dash garlic powder

Add almond butter and warm water to a bowl. Mix well until blended. Add the rest of the ingredients and stir together.

Arugula & Avocado Salad
Arugula
1 Large ripe avocado, cube
Kalamata olives
1 Can chickpeas, drained and rinsed
1 Can cannelloni beans, drained and rinsed
2 Tomatoes, cut to your liking
1 Medium red onion, diced
Unsalted sunflower seeds, generous handful

Add all ingredients, except arugula, into a large bowl and pour over dressing. Mix until everything is coated. Add this to your arugula and serve with a side of salty tortilla chips.
